Good morning TCL reader! Today’s post isn’t so much a recipe, more like a starting off point. As I have mentioned in the past, summertime grilling is one of my favorite ways to prepare food & since going vegetarian, I have had quite a bit more fun being creative with my grill recipes. The great thing about vegetables is how versatile they are; when you grill them, it’s even better.
No specific ingredients for this, just grab some of your favorite summer veggies, toss them in olive oil, salt & pepper, or your favorite spice rub & place on a hot grill until cooked (& blackened a bit!) You can serve them as is with a good potato salad, or make some avocado salsa & pile everything in a tortilla for a vegetarian fajita plate. Have fun creating your own dish!
